About three years ago if you had asked me to cook you something I would have thrown piece of chicken in the oven with some salt and pepper and olive oil and baked it. I hated cooking and wasn't very good at it. After I got married I started experimenting with cooking by following simple recipes, I started to enjoy watching my husband's face light up and gauged a recipe by how many MMMMM's I got from my husband. It just began to evolve from there........

Crispy Garlic Potatoes

I have been asked to post this recipe by several peeps.  This has been quite a fan favorite and it's a great side dish to most any protein. I got this recipe from the Martha Stewart iphone app.  The only thing I changed about this recipet is MORE Garlic...cause well we like garlic!

Ingredients
2 clove(s) garlic clove(s)
½ tsp Ground thyme                                                                         
1 TBSP extra virgin olive oil
1½ pound(s) uncooked red potato(es), sliced 1 inch thick

Instructions

Preheat oven to 475 degrees. Finely chop garlic, and sprinkle with salt. Using a chef's knife, press flat side of blade back and forth across garlic to make a paste. ( I personally use a garlic press, does the same ob in half the time) Transfer to a small bowl; stir in thyme and 1 tablespoon oil. On a large rimmed baking sheet, toss potatoes with garlic mixture; bake until browned on underside, 20 to 25 minutes.
